Today we tackle the three most I this autumn's favorite soup is the soup that warms me from the outside air. we will start with curry soup which has sweet potato and kale, which I like sweet potatoes and kale and they're gone so good together then we will be Make classic butternut squash soup.
this is a phenomenal and very popular time of year, finally, we
will make minestrone the soup really amazing.
soften here for a few minutes we enter with fresh ginger and
some sweet potatoes, and then i will have some Brussels sprouts. I just boiled
it for a while a little but you can also throw it raw and then we'll add some vegetablebroth some curry paste and tomato paste.
some are better than broth and some Bragg liquid aminos, and
then we're going to take this to boil until our soup has been cooked for a
minute and you just want to cook.
until the vegetables are tender we will add a little coconut
milk, this adds a lot of nice kind of cream flavor. ok next I will add some
cabbage will only give a rough cut and we will too gently, add some hard tofu
and you want to be so soft by stirring it to know don't break into soup.
so our soup is done enough, we just going to add some little
touches to take this soup to the next level.
so we're going to add a fresh splash of lemon juice, this really
helps to brighten the taste and it's delicious.
to add a little maple syrup, You can also use agave nectar or whatever sweetener you like. This only
really adds an extra flavor dimension for this soup, and this pretty much isn't it.

on to our next soup, this is butternut squash soup so we will start with delicious
butternut squash. I like it takes off up and down to make it a little easier to
peel.
almost peeled off my arm there we made three soups of the day, will move to add a little olive oil and a little salt. and we'll just go in there with our hands and make sure everything is well coated, so while our butternut squash is in the oven. we will stir fry some onions in a little olive oil, next we will add some garlic. and some crushed red chilies some carrots, next we will add some vegetable stock of sage and bay leaf.
sage of course matches butter pumpkin, a little salt some
cashews will add a nice creamy consistency for this and some better than
boolean. and then we will blend our add-ins Butter Pumpkin and mingle again so
that it completes us butternut pumpkin soup as you can see it's super simple
super easy and delicious I really like this.

on to our third soup. here it is beautiful minestrone soup it's beautiful like
a favorite and so warm and cozy for this time of year, so we'll start by
sauteing some onions in a little olive oil.
along with some chopped minced garlic celery and carrots, this of course adds a very good basis for lots of soup.
we will add some vegetables, green beans stock, and a few
small diced tomatoes. Next, we will add some small red beans and small white
beans, today we add some spices oregano thyme basil parsley cayenne.
and a little salt. after this is cooked for a bit I want to
add some fresh spinach and some cooked mussels just to finish.
